Ingredients:
- 2 medium carrots sliced diagonally
- 2 cups sliced onion (approx. 2 small)
- 2 c. fresh shitake mushrooms-sliced
- 2 cups snow peas
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- ½ cup sliced leeks (white stalk only)
- 6 cups sliced green cabbage (approx. ½ large)
- 5 cloves garlic pressed down with a knife (do not chop)
- 4 c. bok choy (cut into medium-large pieces)
- 4 green onion stalks chopped
- 3 tsp. toasted sesame seeds
- 1 tbsp. expeller pressed canola oil
- 1 tsp. toasted sesame oil
- 1 tsp. salt
- 5 tsp. low sodium soy sauce
- 1 tsp. arrowroot powder
- In a large pot cook 3 tsp expeller pressed canola oil over medium heat.
- Add 5 garlic cloves.
- Add green onion & all vegetables one-by-one, gradually.
- Add remaining ingredients (i.e. sesame seeds, soy sauce, etc.)
- Add 1 tsp. arrowroot mixed with 3 tbsp. boiling water.
- Add 1 tsp. toasted sesame oil.
- Add 1 tsp. salt.
