Sesame Vegetable Saute

Ingredients:

  • 2 medium carrots sliced diagonally
  • 2 cups sliced onion (approx. 2 small)
  • 2 c. fresh shitake mushrooms-sliced
  • 2 cups snow peas
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • ½ cup sliced leeks (white stalk only)
  • 6 cups sliced green cabbage (approx. ½ large)
  • 5 cloves garlic pressed down with a knife (do not chop)
  • 4 c. bok choy (cut into medium-large pieces)
  • 4 green onion stalks chopped
  • 3 tsp. toasted sesame seeds
  • 1 tbsp. expeller pressed canola oil
  • 1 tsp. toasted sesame oil
  • 1 tsp. salt
  • 5 tsp. low sodium soy sauce
  • 1 tsp. arrowroot powder
Preparation:
  • In a large pot cook 3 tsp expeller pressed canola oil over medium heat.
  • Add 5 garlic cloves.
  • Add green onion & all vegetables one-by-one, gradually.
  • Add remaining ingredients (i.e. sesame seeds, soy sauce, etc.)
  • Add 1 tsp. arrowroot mixed with 3 tbsp. boiling water.
  • Add 1 tsp. toasted sesame oil.
  • Add 1 tsp. salt.

* Total estimated cooking time – 15-18 min.
