Ingredients:
- 1 ½ lb. sole or cod fillets
- 2 tbsp. fresh lemon juice
- 1 tbsp. brown sugar
- 1 tsp. extra virgin olive oil
- expeller pressed canola oil spray
- Rinse fresh fillets with cold water and pat dry
- Place fish in shallow baking dish
- Combine lemon juice, brown sugar, and oil in a small bowl
- Drizzle lemon mixture over fish
- Marinate both sides
- Cover and refrigerate for fifteen minutes
- Preheat oven broiler when fish is ready
- Transfer fish to broiler pan sprayed with canola oil spray
- Broil 3-6 minutes
- Turn and baste with remaining marinade
- Broil another 3-6 minutes on the other side
