Lemon Broiled Sole or Cod

Healthy Recipe: Lemon Broiled Sole or Cod Ingredients:

  • 1 ½ lb. sole or cod fillets
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. brown sugar
  • 1 tsp. extra virgin olive oil
  • expeller pressed canola oil spray
Preparation:
  • Rinse fresh fillets with cold water and pat dry
  • Place fish in shallow baking dish
  • Combine lemon juice, brown sugar, and oil in a small bowl
  • Drizzle lemon mixture over fish
  • Marinate both sides
  • Cover and refrigerate for fifteen minutes
  • Preheat oven broiler when fish is ready
  • Transfer fish to broiler pan sprayed with canola oil spray
  • Broil 3-6 minutes
  • Turn and baste with remaining marinade
  • Broil another 3-6 minutes on the other side
