A delicious, low-calorie, vegetarian soup that can be served cold, or as a drink.
Serving size: 4
Ingredients:
- 4 medium tomatoes, peeled and diced
- ¼ large cucumber, peeled and chopped
- 1 large green pepper, seeded and diced
- 1 onion, diced
- 3 garlic cloves, minced
- 3 c. water
- ¼ c. vinegar (or wine, balsamic or red vinegar)
- 3 tsp. lemon juice
- 1 scallion, diced fine
- 1 tbs. extra virgin olive oil
- Puree all ingredients, except scallion in blender
- Add a little water if too spicy
- Strain, discarding any vegetable pieces that did not fully puree
- Chill overnight
- Serve in chilled glasses or bowled with diced scallion floating on top.
