Gaspacho Soup

A delicious, low-calorie, vegetarian soup that can be served cold, or as a drink.

Serving size: 4

Healthy Recipe: Gaspacho Soup Ingredients:

  • 4 medium tomatoes, peeled and diced
  • ¼ large cucumber, peeled and chopped
  • 1 large green pepper, seeded and diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 c. water
  • ¼ c. vinegar (or wine, balsamic or red vinegar)
  • 3 tsp. lemon juice
  • 1 scallion, diced fine
  • 1 tbs. extra virgin olive oil
Directions:
  • Puree all ingredients, except scallion in blender
  • Add a little water if too spicy
  • Strain, discarding any vegetable pieces that did not fully puree
  • Chill overnight
  • Serve in chilled glasses or bowled with diced scallion floating on top.
