Ingredients:
- olive oil cooking spray
- 6 cloves garlic – minced
- ½ c. celery – chopped
- 1 c. carrot – finely chopped
- 1 ½ c. onion – chopped
- 6 c. chicken or vegetable broth
- 2 c. lentils – uncooked, rinsed & drained
- 14 ½ oz. can organic tomatoes stewed, chopped
- ½ tsp. oregano
- ½ tsp. salt
- ½ tsp. black pepper
- in a large soup pot, spray olive oil & sauté garlic, celery, carrots & onions for 5 minutes – until softened
- add water, broth & lentils
- bring to boil over high heat
- reduce heat to low
- cover & simmer for 45 minutes until lentils are tender
- stir occasionally
- add chopped tomatoes & its juice, along with oregano, salt & pepper
- simmer uncovered for 10-15 more minutes
