Lentil Soup

Healthy Recipe Lentil Soup Ingredients:

  • olive oil cooking spray
  • 6 cloves garlic – minced
  • ½ c. celery – chopped
  • 1 c. carrot – finely chopped
  • 1 ½ c. onion – chopped
  • 6 c. chicken or vegetable broth
  • 2 c. lentils – uncooked, rinsed & drained
  • 14 ½ oz. can organic tomatoes stewed, chopped
  • ½ tsp. oregano
  • ½ tsp. salt
  • ½ tsp. black pepper
Preparation:
  • in a large soup pot, spray olive oil & sauté garlic, celery, carrots & onions for 5 minutes – until softened
  • add water, broth & lentils
  • bring to boil over high heat
  • reduce heat to low
  • cover & simmer for 45 minutes until lentils are tender
  • stir occasionally
  • add chopped tomatoes & its juice, along with oregano, salt & pepper
  • simmer uncovered for 10-15 more minutes
