Beet Salad

Healthy Recipe Beet Salad Ingredients:

  • 8 beets – yellow, candy striped, & red beets (can be found at Farmer’s markets)
  • 1 large red onion – sliced into rings
  • 1 tbsp. canola oil (expeller pressed) or extra virgin olive oil
  • 2 tbsp. cider vinegar
  • salt & pepper
Preparation:
  • wash beets well
  • place beets & enough water to cover them in medium-sized saucepan
  • cover & bring to boil
  • reduce heat & cook for 45 minutes or until beets are tender, but not mushy
  • drain & rinse with cold water
  • hold each beet under cold running water & slip skin off
  • slice beets & place in bowl
  • add onions to beets
  • mix oil, vinegar, salt & pepper into small bowl & pour over beets
  • chill for several hours before serving
* Add over mixed green salad for an additional antioxidant power.
