Ingredients:
- 8 beets – yellow, candy striped, & red beets (can be found at Farmer’s markets)
- 1 large red onion – sliced into rings
- 1 tbsp. canola oil (expeller pressed) or extra virgin olive oil
- 2 tbsp. cider vinegar
- salt & pepper
- wash beets well
- place beets & enough water to cover them in medium-sized saucepan
- cover & bring to boil
- reduce heat & cook for 45 minutes or until beets are tender, but not mushy
- drain & rinse with cold water
- hold each beet under cold running water & slip skin off
- slice beets & place in bowl
- add onions to beets
- mix oil, vinegar, salt & pepper into small bowl & pour over beets
- chill for several hours before serving
