Baked Whitefish

Healthy Recipe Baked WhitefishIngredients:

  • 3 yellow onions, chopped
  • 3 garlic cloves, chopped
  • Expeller pressed olive oil cooking spray
  • One 14 oz can organic crushed tomatoes
  • 1/2 cup chopped parsley
  • 1/4 cup red cooking wine
  • Two 16 oz whitefish fillets, lightly sprinkled with salt and pepper to taste
  • One whole lemon thinly sliced
Preparation:
  • Saute onion and garlic in olive oil spray until lightly browned
  • Add tomatoes, oregano, parsley, and simmer 7-10 minutes
  • Add red wine and simmer 3-5 minutes
  • Use olive oil cooking spray to coat a large baking dish
  • Place whitefish onto baking dish and add a dash of salt and pepper
  • Cover the fish with the lemon
  • Top the fish with cooked sauce
  • Cover with aluminum foil
  • Bake at 375° for 40-50 minutes
