Ingredients:
- 3 yellow onions, chopped
- 3 garlic cloves, chopped
- Expeller pressed olive oil cooking spray
- One 14 oz can organic crushed tomatoes
- 1/2 cup chopped parsley
- 1/4 cup red cooking wine
- Two 16 oz whitefish fillets, lightly sprinkled with salt and pepper to taste
- One whole lemon thinly sliced
- Saute onion and garlic in olive oil spray until lightly browned
- Add tomatoes, oregano, parsley, and simmer 7-10 minutes
- Add red wine and simmer 3-5 minutes
- Use olive oil cooking spray to coat a large baking dish
- Place whitefish onto baking dish and add a dash of salt and pepper
- Cover the fish with the lemon
- Top the fish with cooked sauce
- Cover with aluminum foil
- Bake at 375° for 40-50 minutes
