Garbanzo Tofu Burger

What you need

2 egg whites
2 tbsp. finely chopped fresh parsley
1 tsp. ground cumin
1 tsp. ground coriander
3/4 tsp. chili powder
3 tbsp. tahini (sesame butter)
2 cloves garlic
1/4 cup low-fat cottage cheese or firm tofu, crumbled
1 cup cooked chickpeas
1/2 cup wheat bran

What to do

Combine the egg whites, parsley, cumin, coriander, chili powder and tahini in a blender. Add garlic by pushing through a garlic press into the blender. Process on low to medium speed until smooth. Next, add the cottage cheese and process on low speed until smooth. After, add the chickpeas and process again on low until smooth. Stir in the wheat bran by hand and form six patties. Spray a skillet with expeller-pressed canola oil and sauté patties until golden brown on both sides, about six minutes.

Makes six servings.
